"I have learned that producing a lot is good, but producing quality is better". We love these words spoken by Don Teo (as he is affectionately known within his coffee community). No doubt Teo practices what he preaches as the three selections we are now offering from his farm Las Marias (one washed, one honeyed, one naturally processed), are incredibly beautiful and at the same time, dramatically different.
For this honeyed lot, the cherry was harvested, immediately de-pulped, and the fruit was left on the seed during the drying process. The results of leaving the fruit on the seed while drying can be pretty fantastic if done right. And for sure, Teo got it right. Compared to the washed selection the fragrance suggests riper, more intense fruit. In the cup the apple like notes found in the washed lot, turn more towards white grape. You'll also find a lovely guava-like acidity at play, and the sweetness is like sugarcane. If you like the idea of a super sweet, mildly fruit forward cup, then this honeyed selection will not disappoint!
