We love these words spoken by Don Teo (as he is affectionately known within his coffee community).  No doubt Teo practices what he preaches as the three selections we are now offering from his farm Las Marias (one washed, one honeyed, one naturally processed), are incredibly beautiful and at the same time, dramatically different.  

For this natural lot, the cherry was harvested, and then dried with the skin and fruit surrounding the seed. The drying process definitely takes longer for naturals, and the extended time the fruit remains surrounding the seed leads to a much more fruit forward cup profile compared to the washed and honeyed selections. Fresh off the grind, the aromatics suggest ripe plums and fig jam. Those notes carry over into the cup as well and are joined by a cherry cordial like finish. If you love a more intensely fruit forward cup, then this naturally processed gem will likely be your fav.
