Your first thought after opening a bag of Los Chelazos might be - dang these seeds are huge! Yep, they are really big and that's because this special lot is made up entirely of the Pacamara variety. And El Salvador just happens to be the country that first created this delicious super seed after crossing the Pacas and Marogogype varieties at the Institute for Coffee Research lab back in the 1950's.
Los Chelazos is a blend of Pacamara gathered from a small group of producers living in northern El Salvador, along the Honduras border. This years lot was processed using the traditional washed method and it is tasting delish.
The aromatics are wonderfully sweet with soft florals and hints of peach . The peach carries over into the cup as well and is joined by a lively pineapple-like acidity and a middle toned layer of chocolate chip cookies - yes we did use Chips Ahoy in the tasting notes. Sweet, balanced, and not at all easy to stop at one cup.
