“I have learned that producing a lot is good, but that producing quality is better, both go hand in hand, you have to produce a product that makes you wake up every day and feel proud.” We love these words from Teófilo Rodríguez, affectionately known as Don Teó in his community. Clearly Don Teó is adhering to his words and we are excited this year to share two lots with you – one honeyed, one natural.

The honey processed lot is reminiscent of years past, with light touches to the fruiter flavors found in honey processed coffees. After grinding, we are smelling white wine, blackberry, and a hint of rose. Champagne notes carry over into the cup and are joined by a sugarcane sweetness and lively malic acidity. Delicate, balanced, clean and sweet – hard to achieve with a honey processed coffee. No doubt, Don Teó should be proud!
