This is our first ever offering of the bourbon ají variety. Let’s just say it is an absolute gem of a coffee and will definitely not be the last time you’ll see bourbon ají on our list.

Herman Salazar first planted bourbon ají as caturra seeds on his farm La Guaca, and noticed that some of the resulting trees exhibited a much different and unique cup profile. As it turns out, some of the seeds were actually bourbon ají which, like the variety chiroso, is genetically tied to Ethiopian landraces. This just might be our most favorite variety ever!

While co-fermented coffees continue to become more popular (which hopefully ends soon), we are so grateful to the producers who continue to focus on inherently beautiful coffee and traditional processing to exhibit pure terroir. Thank you Herman – this washed ají lot is nothing short of extraordinary! Just off grind the aromatics fill the room with deeply sweet, dark fruit notes. In the cup we are tasting a cornucopia of fruit flavors ranging from grape to cherry to fruit punch. Rich sweetness is prevalent from hot to cold. All of the above is tied together with an elegant mouthfeel to complete an extraordinary cup of coffee.
