For years we have been offering stellar selections from the Los Chelazos group located in the northern department of Chalatenango – along the southwest border of Honduras. The area is rich in biological diversity and included within the Montecristo Trifinio biosphere reserve.

The pacamara variety, a cross between Pacas and Maragogype, first originated in El Salvador. Known for its larger size, the best pacamaras are also big on flavor and Los Chelazos is a wonderful example! After grinding, the aromatics are sweet, floral, and cherry-like. Cherries carry over into the cup as well and are joined by notes of brownies and pineapple. Pacamaras tend to open up as the coffee cools so definitely sip when hot, but enjoy how this coffee blossoms as the temperature drops!
