Huila, Colombia
Mártir
intensely sweet with soft floral aromatics
We taste
soft floral, white grape, peach, toffee
...in this coffee.
Mártir is a group of 20 small scale producers in the La Plata region of Huila, Colombia, led by Didier Pajoy. All of the producers grow organically, or are moving towards organic production, and they are clearly dedicated to high quality coffee.
This blended lot impressed us on the cupping table with intensely sweet and soft floral aromatics. The flavor notes followed suit with notes of peach, white grape, and toffee sweet finish. Amongst a group of really nice coffees from Colombia on the cupping table, Mártir was a standout, and it was a no brainer to make this first time purchase with the hope of many more lots to come. Enjoy!

Transparency Information
We buy, roast, and sell coffee. On a surface level, this sounds simple enough. But buying coffee in a way we are proud of and in a way that those who buy our coffee are proud of is often complex, challenging, and hard work. We find ourselves on a continuum of buying and selling that progresses towards more sustainable, meaningful and equitable relationships. The chart below provides basic information for each lot on where we are on this journey.
