It is really hard to beat coffees from Ethiopia for cold brew, so as with version 8.0, we are rolling with two new selections from Ethiopia for 8.1. As always we like to include a natural component to boost the fruit notes and then a washed component to give the brew a peachy tea like quality.

The largest percentage going into 8.1 at 66%, is a lovely washed lot from the Halo Beriti washing station in Yirgacheffe. Beriti brings the peach like tea notes and mandarin acidity. The natural component, Aye Bombe from Sidamo, is fruity for sure, but not overly fermented and at 33% builds a heavier body and heightens the fruit notes from the Beriti. The result? We often joke that our Migration blends are quite similar to the gesha variety, but at a fraction of the price. This is certainly true for 8.1! Fresh off the grind you will find floral and ripe peach notes. Peach carries over into the cup as well and is joined by mandarin and an earl grey like finish. As always, Migration is killer for cold brew, but should definitely be tried for drip and espresso as well!
