Our first offering from El Salvador for 2023 comes from producer Vicente Diaz, who grows his amazing coffee on his farm El Derrumbo. Although he grows other varieties like Pacas and Gesha, this specific lot is entirely Pacamara. The Pacamara variety was developed by the Salvadoran Institute of Coffee Research (ISIC) in 1958. It is a cross between the Pacas variety, a natural mutation of Bourbon, first discovered by the Pacas family in El Salvador, and the Maragogipe variety, a natural mutation from the Typica variety, first discovered in Brazil. The resulting Pacamara sort of got the best of both worlds from its parents – higher yield and quality from Pacas, high quality and large size from the Maragogipe.
All this to say, the Pacamara variety is now one of the most commonly grown varieties in El Salvador and is regularly amongst the highest scoring coffees in El Salvador’s Cup of Excellence. Vicente’s lot is an amazing example of just how good Pacamaras can be and we were delighted when first trying his coffee on the cupping table. Off the grind we are finding intensely sweet and floral aromatics. Flavors in the cup range from ripe peach to pineapple. Super sweet, lively acidity and heavier body make this gem a very complete and delicious cup.
