Claudia has been operating her farm Los Nubes, since 2020 and this is the second lot we’ve had the privilege of sharing with you.  She applies her extensive knowledge of coffee agriculture and processing to produce some stunning lots from Los Nubes.

This particular lot of pink bourbon was processed by first anaerobically sealing the cherry in a waterless container for 60 hours. The coffee is then pulped and placed back into the sealed containers for another 140 hours. One might think that the extended fermentation time would yield wildly fruity coffee, but in the end it presents like a slightly more fruit forward washed pink bourbon. The results are fantastic and we are finding milder tropical fruit notes like guava mingling nicely with peach rings and hints of watermelon.  Super tasty.

If you really want to be cool, you should also grab a bag of purple caturra from Claudia’s husband, Rodrigo Sanchez. This is the first time we’ve offered a selection from this powerhouse duo simultaneously!
